CONTAMINATION OF BULK MILK BY PSYCHROTROPHIC MICROORGANISMS’ DURING MILKING AND MILK PROCESSING

Abstract


Psychrophilic, psychrotrophic and psychrotolerant microorganisms play a great role in contamination of raw milk, because they are able to multiply not only at moderate, but also at low temperatures. In the research main sources of bacterial contamination of milk and efficiency of chemical sanitary treatment of equipment were detected. The time and condition of milk collection and storage can affect milk bacterial contamination. Our examinations detected that time of psychrotrophic microorganisms’ germination is 6 hours at 7–8°C.
